Turkey stir-fry with couscous

This hybrid of a western turkey dinner with Asian stir-fry flavours provides variety in flavour as well as nutrition.

Shopping List:

Couscous 185 g1 cup
Onion 120 g1 whole
Button squash 125 g1 cup
Sweet potato 300 g2¼ cups
Green bean 250 g2½ cups
Turkey breast 500 g¾ whole
Sauces & spices
Cranberry sauce 250 ml16 tbsp

Preparation Steps:

  1. Peel and cube the sweet potato

  2. Slice the onion and turkey breast

  3. Slice the green beans into 3cm pieces

  4. Slice the yellow squash in half

Cooking Steps:

  1. Cover couscous with boiling water. Wrap in cling film and set aside

  2. Heat sweet potato in microwave on high for 2-3 minutes or until soft and set aside

  3. Fry onion in frypan over medium heat for 5 minutes or until golden

  4. Add turkey and cook until browned. Transfer to a bowl

  5. Add beans to pan and stir-fry for 1 minute. Add squash, cranberry sauce, sweet potato, onion and turkey

  6. Stir until cranberry sauce is mixed through, then cook for a further 2 minutes

Serving instructions:

Fluff couscous with a fork and serve with stir-fry
