Prawn and vegetable skewers

Great summer barbecue dish, especially if you can get fresh prawns. Healthy, delicious and easy to prepare.

Shopping List:

Sauces & spices
Sweet chilli sauce 63 ml4 tbsp
Soy sauce 63 ml4 tbsp
Zucchini 392 g2 whole
Mushroom, button 144 g1¼ cup
Tomato, cherry 272 g1½ cup
Capsicum, red 110 g1 whole
Pineapple pieces, canned 78 g½ cup
King prawns 800 g5¼ cups

Preparation Steps:

  1. Soak bamboo skewers in water

  2. Peel and devein prawns, leave tails intact

  3. Rinse prawns and set aside

  4. Deseed capsicum and cut into chunks

  5. Cut zucchini into chunks

  6. Halve button mushrooms

  7. Drain pineapple pieces

  8. Alternatively thread capsicum, zucchini, mushrooms, pineapple and tomatoes on to skewers

  9. Thread prawns on to separate skewers

Cooking Steps:

  1. Preheat griddle or frypan on medium-high heat

  2. Place vegetable skewers on pan and cook for 3 - 5 minutes, turning occasionally

  3. Add prawn skewers and cook for a further 3 - 5 minutes, turning occasionally
