Nicoise salad

This wonderfully appetising tuna salad gets its name from its famous dijon mustard infused salad dressing. A quick and easy dish, ready in minutes.

Shopping List:

Potato, chat 1500 g12 whole
Tomato, cherry 180 g1 cup
Olives, black, pitted 24 g¼ cup
Baby spinach leaves 150 g5 cups
Green bean 200 g2 cups
Basil 24 g¾ cup
Egg 200 g4 whole
Mayonnaise 173 g¾ cup
Sauces & spices
Mustard, Dijon 9 g1 tbsp
Lemon juice 10 ml¾ tbsp
Tuna, canned in oil 400 g2½ cups

Preparation Steps:

  1. Halve the chat potatoes and the cherry tomatoes

  2. Drain the tuna

  3. Hard boil the eggs, peel and then quarter

Cooking Steps:

  1. Boil the potatoes in saucepan for 8-10 minutes or until cooked. Drain

  2. Trim the ends of the beans and blanch for approximately 2 minutes in hot water

  3. Combine spinach, tomatoes, beans and potatoes in a large serving bowl

  4. Flake tuna over the top and scatter with olives, basil and eggs

  5. Combine mayonnaise, mustard and lemon juice and drizzle over salad

Serving instructions:

Season with pepper and serve
