Mexican chicken baskets

Sensational Mexican flavours, in a basket, with a chicken. Have fun creating this dish and sharing with friends

Shopping List:

Tortilla, corn 288 g12 whole
Tomato, cherry 170 g1 cup
Kidney beans, canned 440 g1 whole
Salsa 200 g¾ cup
Lettuce 250 g4½ cups
Corn kernels, canned 300 g¾ whole
Capsicum, red 110 g1 whole
Mozzarella 110 g1 cup
Chicken mince 500 g3 cups

Preparation Steps:

  1. Deseed and finely chop the capsicum

  2. Drain and rinse the kidney beans and the corn kernels

  3. Cut the tomatoes into quarters

  4. Grate the cheese

  5. Preheat oven to 180°C or 350°F

Cooking Steps:

  1. Heat tortillas in microwave on high for 30-60 seconds or until warm and flexible

  2. Brush tortillas with oil on one side and arrange oiled side down in a muffin pan to form little baskets. Keep the openings and the sides as wide as possible to hold as much filling as possible

  3. Bake the tortillas for 7-10 minutes or until golden brown, then allow the tortillas to cool in the muffin pan to hold the shape

  4. Oil frypan and cook mince over high heat for 5 minutes or until browned, ensure all lumps are broken up

  5. Add capsicum, beans, salsa and tomatoes and heat through. Add pepper to taste and simmer for 5-10 minutes or until sauce thickens

  6. Line tortilla baskets with lettuce leaves and top with a large spoonful of chicken mixture

Serving instructions:

Sprinkle with corn and cheese
