Calamari salad

Description

A great mix of flavoursome calamari with the lightness of a salad serving. Great for summer, and quick to prepare.

Shopping List:

Grain
Couscous 278 g1½ cup
Sauces & spices
Vinegar, red wine 125 ml8 tbsp
Olive oil 31 ml2 tbsp
Vegetable
Garlic clove 6 g2 tsp
Cucumber 250 g1 whole
Chilli, jalapeno 14 g1 whole
Capsicum, green 110 g1 whole
Capsicum, red 110 g1 whole
Capsicum, yellow 110 g1 whole
Herb
Parsley 64 g1 cup
Spring onion 45 g3 whole
Parsley, flat leaf 8 g2 tbsp
Shellfish
Calamari tubes 500 g3 whole

Preparation Steps:

  1. Crush or mince the garlic

  2. Clean calamari and cut into rings

  3. Chop the celery and the cucumber

  4. Deseed the capsicums and cut into thin strips

  5. Chop: the spring onions, the parsley and the jalapeno chilli

Cooking Steps:

  1. Cover couscous with boiling water. Wrap in cling film and set aside

  2. Mix the vinegar, garlic and oil in a small bowl

  3. Bring to low boil enough water for the calamari

  4. Stir in squid and cook for 2 minutes or until opaque and tender. Drain and cool

  5. Mix celery, cucumber, capsicums, spring onions, parsley and chilli in a large bowl

  6. Gently toss with calamari and dressing. Refrigerate until service (if required)

Serving instructions:

Fluff couscous with a fork and serve with calamari
